Recipe and Ingredients

Papa Gene’s Old Fashioned Fudge


2 cups sugar

1 cup whole milk

1 stick butter

6 tablespoons cocoa

1 cup peanut butter

1 cup chopped dry roasted peanuts


Prepare a 10 inch plate for fudge by buttering the plate. Use tip of stick of butter to butter plate.

Have a cup of cold water ready to test your fudge.


In a heavy 2 qt sauce pan combine sugar, milk, butter and cocoa . Heat and stirring constantly over medium heat, till sugar dissolves and mixture comes to a boil then cook to a soft ball stage ( 234°) about 5 minutes. Then remove from heat and add peanut butter. Beating by hand until peanut butter is dissolved and until fudge is firm and starts to lose it’s gloss. Add peanuts and pour into buttered plate. Let stand until firm.


NOTE:

Papa uses a wood spoon while beating and he drops the fudge in the cold water with a wood spoon. Any kind of spoon can be used for putting your drops in the water.

The fudge will form a small soft glob, that will flatten when you remove it from the water. That will be the soft-ball stage. You may have to test fudge more then once.


Our granddaughter loves this fudge but has always had problems making it. It has to be stirred constantly or it will burn.

You can tell when it starts to get thicker in the pan then start to test it in the water.

This fudge can be made without the peanut butter, if you have someone allergic to peanut butter in the family. Without peanut butter is the way fudge use to be made.

Exactly what I was looking for, thank you. We tried "fudge" a couple of days ago which is basically equal quantities of butter and melted chocolate and then adding in icing sugar until the mixture is stiff. Spread into tin and pop in fridge until hard. It was pretty yummy but I want to try the real deal now.
