Green Bean and Potato Mashed Casserole

My family loves this casserole. Including two granddaughters that are always hard to please. It's easy, fast and cheap recipe. I have made this casserole from the time my kids were little. You can make it a day ahead and just add the potatoes to the top when you’re getting ready to cook it. If you want more potatoes on the top you can add more.

French cut, whole or garden green beans can be used. I prefer whole green beans. If you use garden green beans make sure they are cooked first.

How To Make Mashed Potatoes

Clean potatoes and peel cut into junks. Add to a 2 qt. saucepan half full of water and add salt to water. I put in about a teaspoon of salt. Bring to a boil. Potatoes are done when fork inserts into potatoes easily. Drain and add milk, butter and more salt if needed. Mash them with a potato masher or use a mixer. You can add more milk if you need it. You can also add more butter or no butter at all. I like creamer mashed potatoes but some like the chunkier mashed potatoes. You can make either one to the top of this casserole.

Ingredients:

1 lb. of hamburger

3-4 large potatoes cooked and mashed

1 can of green beans, french cut or regular

1 can tomato soup

1/2 cup milk

3 tablespoons of butter

salt and pepper

vegetable spray

Preparation:

First get your potatoes going, peeled, cut, cooked and mashed. When mashing add the milk, butter and salt/pepper to taste.

Fry hamburger with salt and pepper to taste and drain.

Mix together hamburger, tomato soup and green beans. Place in a large vegetable sprayed casserole dish. Top with mashed potatoes. I put the potatoes on top with a large spoon four scoops so that the casserole can bubble up between the potatoes.

Bake in a 400° oven until casserole is heated completely through and bubbling and potatoes are browned on top.

I have also added an egg to my mashed potatoes makes them a crisper on the top.
