Easy Leftover Baked Potato Chicken Soup, Hot and Healthy Recipe.
Why waste food? Anytime you can use leftovers you are saving money on your grocery bill. It's ashamed to let good food go in the garbage. This soup is one of the soups I have that leftovers can be used. This is a great hot winter soup on a cold winter day. It’s an easy soup to make and you can use leftover potatoes or chicken/turkey to make it. We also have such big potatoes because we get them right out of the fields Where my husband works.They are just too big for us to eat the whole thing. I cut in half and save part of it.
Recipe
Easy Left Over Baked Potato Chicken Soup
4 pieces of cooked chicken or turkey (4 thighs) or just chicken you have leftover cut in pieces or leftover rotisserie chicken.
2 cans of low fat chicken broth
1 can of beef broth
1 pkg. of small mushrooms I used the white
½ package of frozen broccoli.
1 to 11/2 large baked potato (leftover)
1 tbsp. of Italian seasoning
1 tbsp. sweet basil
Salt and pepper to taste
First I put the mushrooms in the beef broth in a pan on the stove and boil until the broth is part way gone. Do not cut up mushrooms leave whole.
Take leftover large baked potatoes or just bake some potatoes bake in microwave whichever way you do then skin them and cut in chunks?
Cook broccoli in microwave in some butter until done
Place mushrooms and juice, baked potatoes, broccoli with butter and chicken in chicken broth on the stove
Bring to boil lower heat and cook for a short time but not so long to use up the broth more broth can be added if needed or this soup can be just heated in the microwave.
Everything is already cooked so it doesn't have to be cooked a long time. My very favorite thing about this soup is it’s easy for one thing and the other is the mushrooms. I don’t really like mushrooms I take them off of pizza, but I love them when cooked this way.
The broth in this soup is delicious after all the items are cooked in it.
Hint
Here’s a hint for this soup. I know many people don't like broccoli so it can be substituted for corn or carrots anything you want. You can also use leftover vegetables of any kind.
HINT:
Don't forget if you have a chicken carcass be sure to cook it up with vegetables such as celery, onions and carrots and make a chicken or turkey broth from it. I put mine in a jar and place it in the freezer for my next batch of soup.
HINT:
If you don't like all the fat in a broth, place in the refrigerator and all the fat will come to the top then just skim it off the top and you will have a broth with very little fat.
